Midweek Meal - Quicky Quiche
I blogged about a quiche recipe last year and am updating my post to submit to the Britmums #eggmainsinminutes linky.
Quiche is easy to make, and on this occasion I made my own pastry (pastry recipe at the bottom of this post). However, I have picked up ready rolled shortcrust pastry on many occasions and it does the job for a tasty quiche every time.
With ready rolled pastry just follow the instructions in placing the pastry into the tin and trimming the edges.
For the filling:
Fry 150g of pancetta cubes lightly and place in pastry case. Slice 75g of cheddar cheese and place on top of the pancetta. Then add sliced red onion and sliced tomato.
Beat 3 eggs with 125ml of single cream or half cream/half milk. Add a teaspoon of chives. Pour the mixture into the pastry case along with the other ingredients.
Bake the quiche in the oven for a further 30mins on 180C (fan oven) or until golden brown.

To make the pastry:
Sieve 200g of plain flour into a bowl, add 50g of lard and 50g of marg and rub into the flour. Once rubbed in, add a little cold water and mix into a stiff dough. Knead lightly then roll out and place in a flan tin, pressing the pastry to the sides of the tin.
I always blind bake the pastry: once the pastry is in the tin prick the base with a fork several times and line with greaseproof paper. Cover the base with baking beans and place in the oven for about 15mins on about 180C. Take baking beans and greaseproof paper out after baking.
